1 1/4 cups sugar
1/2 cup raisins
2 cups flour
1/2 cup flaked coconut
2 tsps. cinnamon
3 eggs, beaten
2 tsps. baking soda
1/2 cup applesauce
1/2 tsp. salt
1/2 cup oil
2 cups shredded carrots
1/2 tsp. vanilla
1/2 cup chopped walnuts

In large bowl, blend sugar, flour, cinnamon, baking soda, and salt. Add carrots, walnuts, raisins, and coconut. Mix well. Add remaining ingredients. Stir until well blended. Spoon batter into one dozen greased muffin cups. Bake at 350* for about 20 minutes, or until muffins are browned and test done. Makes 12.
