WE'RE IN THE HOLIDAY HOME STRETCH

Most of the gifts have been wrapped, menus planned, groceries purchased, and cookies baked. I didn't get every recipe on my list baked but what's done is fine. I do have one more recipe to share if you can stand it. I'm going to set aside time to bake some of these in the morning before I do some last minute straightening up around here.
My mom will turn 87 on Christmas Day and she loves, loves, loves coconut. My grandmother made a coconut cake for Mom every Christmas when she was a child and it's been our tradition to provide one for her each year as well. This year's cake will not contain any of those sweet flakes. So...in honor of Mom's love for coconut, I'll make these cookies for her. She needs them so we can carry on the tradition. That's my story and I'm sticking to it.
P.S. I did make these and they were well-received. Actually, I really like them a lot. I'll definitely make them again. My drizzling technique leaves a bit to be desired, but they were good anyway.
WHITE CHOCOLATE MACAROON COOKIES

INGREDIENTS:
1 pouch (1 lb 1.5 oz) Betty Crocker Sugar Cookie mix
1/2 cup butter or margarine, softened (not melted)
1 egg
1 cup flaked coconut
1 cup white vanilla baking chips
1/2 teaspoon coconut extract
1/2 cup chopped macadamia nuts - optional
DRIZZLE:
1/2 cup white vanilla baking chips
1 tablespoon shortening
DIRECTIONS:
Heat oven to 375°F. In large bowl, stir all ingredients except 1/2 cup chips and the shortening until dough forms. Drop dough by rounded teaspoonsful 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
In small microwavable bowl, melt 1/2 cup chips and the shortening on High 30 to 60 seconds, stirring every 15 seconds, until melted. Drizzle over cookies.
