VALENTINE'S DAY IS JUST AROUND THE CORNER













I thought I'd offer some recipes that might be fun to make and share for Valentine's Day:
CHERRY COCONUT BARS
I've made these for family gatherings and bakes sales - people often ask for the recipe.
Crust - Mix in a food processor, or with your hands...
1 cup flour
1/2 cup butter or margarine - room temperature
3 tablespoons powdered sugar
Mixture must be smooth. Press into bottom of 8" x 8" x 2" pan. Bake for approximately 25 minutes in a 350-degree oven. While baking, mix the following in a large mixing bowl:
2 eggs (slightly beaten)
1 cup sugar
1/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
3/4 cup chopped nuts (pecans, walnuts, or macadamias are good)
1/2 cup coconut
1/2 cup quartered maraschino cherries.
Mix all ingredients and take out the pan of pastry crust that has been baking for 25 minutes. Spread mixture evenly on top and bake for another 25 minutes (check at 20 minutes - do not over-bake). Take from oven, let cool, then cut into bars. Heavenly stuff! Enjoy!

APPLE SALAD
6 apples diced (I use red and green/yelow for color)
1 cup celery diced fine
1 med can crushed pineapple (well drained)
1/2 package mini marshmallows
1/2 cup mayo (or salad dressing)
1 small bowl cool whip
1/2 cup walnut pieces (small pieces)
Recipe call for peeling the apples..I don't.....but that can be your choice.
Coat apples with lemon juiceor lemon/lime soda (to keep apples from turning brown). Mix apples, drained pineapple, marshmallows and nuts in bowl. Mix mayo and cool whip and add to apple mixture and stir...serve well chilled.

MOM'S CHERRY CREAM PIE
1/2 pt. whipping cream
1/2 c. powdered sugar
3-oz. pkg. cream cheese
9-inch pie crust - baked
21-oz. can cherry pie filling
Blend whipping cream, powdered sugar and cream cheese together until smooth. Pour into cooled pie crust and top with cherry pie filling. Chill until set. Makes 8 servings.

SWEDISH JELLY BARS
This recipe was given to me in 1978 by a church friend. She and I worked on some of the same committees. My friend and I lost touch, but I still use the recipes she shared.

Ingredients:

1 and 3/4 cups flour
1/2 cup sugar
1/2 cup shortening
1 egg
2 tsp. baking powder
1/2 tsp. salt
red currant jelly or strawberry jam

Mix ingredients well. Roll out dough and divide into 2 long sections (each the length of a cookie sheet). Pat one section down onto cookie sheet, lengthwise. Spread that section generously with currant jelly (or jelly of your choice). Carefully put remaining section of dough over top of the section with jelly. Bake at 425* until light brown. Cut into small squares when completely cool.

Thanks Debra - Hope you enjoy making some of them. I was trying to think of recipes I liked that had the color RED in them - for Valentine's Day. LOL.
