SWEDISH JELLY BARS


I found another recipe that would be good to make for Valentine's Day. I was clearing off some of the rubble from my computer desk (I can't seem to keep it clutter-free) and came across the recipe in a little cookie booklet our church put together over 25 years ago. We were holding our very first holiday bazaar and thought a collection of cookie recipes would be a good seller. Being novices, we didn't know we could send away and have a company do most of the work for us, so we just did the best we could. Our church secretary graciously typed out the recipes, but that was before the church used computers and spell checkers, so we have the recipes we shared - typos and all.

This recipe is a favorite from that little cookie booklet. My booklet is torn, tattered, and splattered. I have many other cookie books that are nicer and newer, but this one is my favorite. It reminds me of friends from my former church - some of whom are no longer with us. A few of my own recipes are in the booklet, however, this particular recipe one was from my friend, Judy, who said it had been handed down from her grandmother. Enjoy.

SWEDISH JELLY BARS

1 and 3/4 cups flour
1/2 cup sugar
1/2 cup shortening
1 egg
2 tsp. baking powder
1/2 tsp. salt

red currant jelly

Mix ingredients well. Roll out dough and divide into 2 long sections (each the length of a cookie sheet). Pat one section down onto cookie sheet, lengthwise. Spread that section generously with currant jelly (or jelly of your choice). Carefully put remaining section of dough over top of the section with jelly. Bake at 425* until light brown. Cut into small squares when completely cool.
