SIMPLY PERFECTION



















MY LITTLE JELL-O COOKBOOK MIGHT BE CONSIDERED VINTAGE!

One of the Easter traditions I remember is a dish my mom used to make for company dinners - a Jello recipe she called Perfection Salad. I've also heard it called Sunset Salad, but under either name, it's a simple recipe to fix and tastes so good. Here it is:
PERFECTION SALAD
Ingredients:
1 package orange Jell-O (Orange, Apricot, Madarin)
1 cup boiling water
1 (8 ounce) can crushed pineapple with juice
1 teaspoon lemon juice
1 cup grated carrots
Directions:
1 Dissolve jello in boiling water.
2 Add pineapple with juice, and lemon juice.
3 Refrigerate until partially set.
4 Add carrots
5 Chill until completely set.
