RHUBARB PIE TIME

'Tis the season for rhubarb pie. I made one last night but it wasn't one of my best efforts. A couple months ago I bought some rhubarb but decided to not use it right away, so I chopped it into bite-size pieces and froze it. I allowed it to thaw before using it for the pie. I won't try that again. Rhubarb is one of my spouse's favorites. People seem to either love it or hate it and it seems to be something for which one has to acquire a taste. I'll make another pie today and surprise my spouse with it. He sweetly choked down a piece of last night's pie. He even offered that the part of the crust that wasn't burned tasted good. (*v*) He was being kind.
My mom grew rhubarb in a corner of our backyard when I was a child. Rhubarb pie happened to be one of my dad's favorites too, and the little patch yielded enough rhubarb for about two pies each summer. THINK OF THE PIES THAT COULD BE MADE FROM THIS RHUBARB PATCH

FRESH RHUBARB PIE
Ingredients:
4 cups chopped rhubarb
1-1/3 cups white sugar
6 tablespoons all-purpose flour
1 tablespoon butter
1 recipe pastry for a 9-inch double crust pie
Directions:
Preheat oven to 450 degrees F Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Mix rhubarb with remaining sugar and flour and pour into pie pan. Dot with small pieces of butter. Cover with top crust. Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F, and continue baking for 40 to 45 minutes. Serve warm or cold.
I baked that second rhubarb pie and it was well-received by my spouse. I thought it was good too, if I do say so myself.

never had it..remember trying a bite of rhubarb in the garden and it was tart and I hated it..but I am sure with some sugar it would be tasty..;)

It looks so good! Strawberry Rhubarb is really popular around here. I've been curious about making it, but been intimidated since the leaves are poisonous....I'm not sure if I trust myself, lol....

YUM YUM love it made into a crumble and have a big clump growing in the garden..Just the other day I heard my youngest shouting to his dad.."I FOUND THE CRUMBLE DAD AND IT IS REALLY GROWING NOW" lol.. :0)

Hi Kady--how wonderful of you to do the pie over again for Hubby--I sure hope he realizes what a "gem" you are!!!!
