AFTERNOON DELIGHT


I found a recipe for Chocolate Chip Criss-Cross Cookies and tried it yesterday afternoon. I'm not fond of dark chocolate but these cookies are good. I had to taste one since it fell apart as I was removing it from the cookie sheet. These were quick and easy to make. The only thing I did differently from what the recipe suggested was to drop them by teaspoonsful onto the cookie sheets instead of rolling them into balls. My dough was a bit too soft to roll them, but next time I'll try chilling the dough. I might also add some chopped nuts when I make them again. Try these - you'll like them! I'm taking a tin of these cookies to a special neighbor today. She brings our trash cans from the curb to the garage door every week without fail. She doesn't have to do that but we appreciate her thoughtfulness.
CHOCOLATE CHIP CRISS-CROSS COOKIES
Ingredients:
1-1/4 cups (2-1/2 sticks) butter or margarine, softened
2 cups granulated sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup powered cocoa
1 teaspoon baking powder
1/2 teaspoon salt
2 cups (12-oz. pkg.) semi-sweet or dark chocolate chips

Directions:
1. Heat oven to 350°F.
2. Beat butter and granulated sugar in large bowl until light and fluffy. Add eggs and vanilla; beat well. Stir together flour, cocoa, baking powder and salt. Gradually beat into butter mixture. Stir in chocolate chips.
3. Roll dough into 1-inch balls. Place on ungreased cookie sheet. Flatten balls with tines of fork. Flatten again in opposite direction, forming crisscross marks.
4. Bake 8 to 9 minutes or just until cookies are set. (Do not over bake - cookies will be soft.) Cool slightly; remove from cookie sheet and cool completely. Makes about 6 dozen cookies.
