APPEASING THE COOKIE MONSTER


SOFT GINGER COOKIES and SNICKERDOODLES

Today I listened to my inner child and baked some cookies. Baking cookies isn't a bad thing unless one cannot limit herself to a couple cookies now and then. I'm not saying I have that weakness, but . . .
Actually, I had two Betty Crocker cookie mixes (Gingerbread and Sugar Cookie) from when my granddaughter spent time here after Christmas. She and I planned to bake cookies but when we found a huge cupcake mold on sale, we decided to make a giant cupcake instead. Other than one 9"x9" pan of Ghirardelli chocolate brownies two weeks ago, I haven't baked any sweets (that I can recall) since the holidays. I guess Spouse forgot all about the brownies sitting in the tin because I had to throw out the hardened remnants a few days ago. How does a person forget there are chocolate brownies in the house?
To make quick work of baking today, I made BIG cookies. They turned out a bit larger than I'd expected, but I did finish quickly. I used the Sugar Cookie mix for Snickerdoodles, added one teaspoon Cream of Tartar to the mix, and rolled the formed dough in cinnamon sugar before baking. I used the Gingerbread mix as it was and also rolled the formed balls of dough in sugar before baking. Spouse drove to the grocery store for a few things this afternoon and by the time he'd returned, the cookies had been baked and the kitchen had been cleaned. It's not spotless, but it's as clean as it's going to be today. The house smells so good and Spouse seems pleased to have some fresh baked cookies.
Since Christmas, I've been pacing myself and doing my best to not over-indulge. I probably ate more cookies than was wise over the holidays so I've been suppressing the urge to bake, but since I'm not someone who deals well with deprivation, I'll allow myself a few bites of cookie now and then. The fact is, I love cookies and I'm afraid they love me too.

Kady, I love cookies too. I made some v-day ones last week, and have forgotten them. Little one knows where we keep the "goodie" stash, but she must have forgotten too. Funny how the holidays roll around and I eat my heart out, and then when it's all over, I think "ohhh, I don't need those!" Why didn't I think that before the holidays? Oh well, we only live once and I figure I might as well die happy :) Have a great weekend!

Those cookies look delicious! I would never be able to stop at one. When I make cookies they just keep calling my name. :)

We buy the break and bake kind and I have trained Mike to make them himself. I also buy him those Warm Delights bowls. He loves them and he scarfs them down. Makes him feel good to eat warm cookies. Makes me happy to not have to bake.
