It's another cold and dreary day in the 'Burg so I decided to make Potato Soup and warm us up this afternoon. There's nothing more soothing than a hot bowl of homemade soup on a cold winter day. It warms the soul and makes the house smell delicious as it simmers. I made up my own recipe for potato soup and added some diced ham and a bit of shredded sharp cheddar cheese. I don't add salt since the ham and cheese add a little. For a thicker soup, mash one of the potatoes and add that to the diced ones. We love this soup and hope you will too.
EASY CHEESY POTATO SOUPIngredients:
4 cups skimmed milk (add more if needed)
1 cup diced cooked ham
1 tsp. minced parsley
1 Tbsp. onion flakes (or freshly diced onion if you choose)
5 cups peeled and diced potatoes ( I used 8 medium)
1/2 cup finely shredded sharp cheese
1/2 cup shredded hot pepper jack cheese (optional)
1/2 tsp. black pepper
1/4 tsp. ground red pepper (also optional)
In large soup pot, combine all ingredients and cook over medium heat 15 minutes, stirring often, until warmed through and cheese is melted. Add more milk if soup is too thick. Remove from heat when soup is completely warm. Enjoy.
